Don't Heat Up the Kitchen for a Sweet Treat!

When it's just too hot to turn on the oven this summer, but your family still wants something sweet, try these great no-bake bars.  They will be a big hit!

No-Bake Chocolate Bars

1/2 cup plus 1 Tablespoon unsalted butter
1/2 cup granulated sugar
5 Tablespoons unsweetened cocoa powder
1 teaspoon vanilla
1 egg
2 cups vanilla wafer crumbs
1/2 cup finely chopped almonds
3/4 cup shredded coconut
1/2 cup unsalted butter, softened
1-1/3 cups powdered sugar
3 egg yolks
3 ounces semisweet chocolate chips, heated just until barely melted, then cooled
1 teaspoon vanilla

1.  In the top of a double boiler, place the 1/2 cup plus 1 Tablespoon butter, granulated sugar, cocoa powder, 1 teaspoon vanilla, and the egg.  Place over simmering water, stirring until butter melts.  Mix in vanilla wafer crumbs, almonds, and coconut.  Press mixture firmly in ungreased jelly roll pan (15-1/2-by-10-by-1-inch).  Refrigerate uncovered until firm, about 2 hours.
2.  Mix the 1/2 cup softened butter, powdered sugar, egg yolks, chocolate, and 1 teaspoon vanilla in large mixer bowl until smooth.  Spread over refrigerated layer; refrigerate until firm, about 2 hours.  Cut into bars to serve. Makes 4-6 dozen, depending on how small the squares are cut.
