These no-bake cookies are made several weeks before Christmas and refrigerated in airtight containers so the flavors can blend and become better with each week. If you make these now, they will be ready to serve on Christmas Eve.
No-Bake Coconut Rum Logs
4 cups coarsely crushed vanilla wafers
1-1/2 cups finely chopped walnuts
1 can (3-1/2 ounces) flaked coconut
1 can (14 ounces) sweetened condensed milk
2/3 cup rum
Powdered sugar
Combine vanilla wafer crumbs, nuts, and coconut in a large bowl. Stir in condensed milk and rum until blended. Chill until firm, at least 4 hours. Shape tablespoonfuls of mixture into 1-inch logs. Roll in powdered sugar. (Refrigerate mixture if it becomes too soft). Store in airtight container in refrigerator up to 1 month. Roll in powdered sugar again before serving, if desired. Makes about 6 dozen.
