I have many appetizer and hors d'oeuvre cookbooks that contain recipes for freezing, but this is the only one on my shelves where every recipe is completely about freezing hors d'oeuvres. If you are planning a Christmas or New Year's party and need plenty of hors d'oeuvres, just imagine how nice it would be to have them all done weeks before the event.
When making bite-sized appetizers, there are some pieces of equipment you will need to make the process work smoothly and quickly, such as serrated knives, butter spreaders, canape or cookie cutters, cheese grater, wire whisks, tartlet pans, baking sheets, pastry bag and tips, and assorted spoons and spatulas. I love parchment paper, and keep that on hand, too. The book is big on bread-based canapes, since you can top them with just about anything imaginable, they freeze beautifully, and make a colorful presentation on a serving table. There are many recipes for seafood, chicken, and cheeses. So relax, take a day to make containers of frozen appetizers and you will be able to enjoy your own party.
Who wrote it has all my admiration!
