These are some wonderful Finnish cookies called Inkivaarileivat. Try saying that 3 times! We'll just call them ginger cookies.
FINNISH GINGER COOKIES
1/4 cup unsalted butter, softened
1/4 cup packed dark brown sugar
1/4 cup whipping cream
1/4 cup light molasses
1-1/2 teaspoons ground ginger
1-1/2 teaspoons ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/2 cups all-purpose flour
1. Place butter, brown sugar, whipping cream, and molasses in a mixer bowl. Mix until well-blended. Stir in remaining ingredients and mix well. Cover dough and refrigerate at least 3 hours.
2. Heat oven to 375 degrees. Divide dough into 4 parts. Roll each part to 1/8 inch thickness on lightly floured work surface.
3. Cut into 2-1/2-inch circles with scalloped cookie cutter. Place 1-inch apart on parchment-lined baking sheets.
4. Bake until light brown, about 8 minutes. Cool on wire racks. Makes about 3-1/2 dozen cookies.
